In the past year we've even seen a barrage of media coverage about a possible chicken wing shortage. Wholesale chicken wing prices in the U.S. are up 40% since 2008. But as we explained in a recent piece, help is on the way — in the form of a new technology that will enable producers to extract 50 percent more meat from the wing itself. The timing couldn't be better. Last year, for the first time in history, wing prices rose above those of the chicken breast, traditionally the most popular section of the bird.
